The working principle of thermocouples is essentially based on the SEEBECK effect (standardization CEI.584 DIN43720).

The thermocouples measure the difference in temperature between the measurement point and the compensation point.

Thermocouples can be of different types, either jacketed with a metal casing, or under ceramic beads.
